Vegan Cinnzeo Cinnamon Rolls
Happy eighth day of goodness! Today's recipe is a very exciting one as we have successfully mastered the vegan cinnamon roll, which is obviously of extremely importance. It is everything a perfect cinnamon roll should be and more... Reviewers have said that they "couldn't even tell it was vegan" so that's sayin something about their buttery, gooey taste. Some may even say they taste like the classic Cinnzeo buns of delight, but you'll have to try it for yourself and see... Here's how!
Ingredients:
For the dough:
4 cups all purpose flour
2 1/4 tsp active dry yeast
1 cup of almond milk, warm
1/2 cup white sugar
1/3 cup vegan margarine or butter, softened
2 flax eggs (or chia or any egg replacer... you know the drill by now)
1 tsp salt
For the filling:
1/3 cup vegan margarine or butter
1 cup brown sugar
3 tbsp cinnamon
For the icing:
Once again, Betty Crocker Cream Cheese Frosting. Weirdly vegan, but tastes great and makes your job a whole lot easier.
Instructions:
Warm the milk over medium heat until it is quite warm but not hot. Add it to a bowl with the yeast and let it sit for about 5-10 minutes.
In a separate bowl, mix together the flour, sugar, flax eggs, salt, and vegan margarine with an electric beater.
Add the milk and yeast mixture and mix well.
In an oiled bowl, let the dough sit for about an hour in a warm place so it can rise. It should double in size but if it doesn't quite get there, do not be concerned. Ours didn't double in size and still turned out wonderfully.
Preheat the oven to 350F and grease a baking pan or dish. We used three different baking dishes to fit all of the rolls but if you have a large baking pan they should all fit.
Roll out the dough to be roughly 16in x 12in. Basically you want a rectangular shape that will roll up nicely.
Mix the brown sugar, cinnamon, and vegan margarine in a bowl and spread it evenly over the dough.
Tightly roll the dough up starting at the long end. Once rolled, cut it into roughly 1.5 inch rolls. Gently and slowly cut through it with a knife as to not squish down the dough.
Place them in your greased baking dishes and let it sit for another 30 minutes, covered with a damp towel, to rise and hopefully double in size. Once again, if they don't totally double in size they will still turn out.
Pop them in the oven and bake for 25-30 minutes until the tops are a light golden brown.
Spread icing over the rolls when they are fresh out of the oven so it can melt nicely.
