Flaky Herby Vegan Biscuits

Happy fourth day of goodness! On this lovely winter day we have a flaky, flavourful biscuit recipe for all you biscuit lovers out there. We always thought biscuit making was a complicated and time-consuming process, but turns out it's actually quite simple and if we can do it, so can you. We made a gluten-free batch as well as a gluten-full batch and both turned out great, so modify it to fit your needs and let's begin!

Ingredients:

2 cups all purpose flour or gluten-free flour of your choice

3/4 cup almond milk or any plant-based milk of your choice

7 tbsp vegan butter or margarine

1 tsp salt

1 tsp sugar

1 tbsp baking powder

1 tsp rosemary

1 tsp thyme

1 tsp chopped chives, fresh or dried

Instructions:

Preheat oven to 425F.

Combine all the dry ingredients in a large bowl.

Add in the butter either using your hands or with a pastry cutter. We do not have a pastry cutter (crazy, right?!) so we used a masher and it worked just fine.

Once the dough is flaky and forms little balls, slowly add in the milk and stir until it is all combined. Be sure not to over-stir! Once the dough has formed, do not mix it anymore.

Roll out the dough to about 3/4 to 1 inch thickness. Cut out round shapes using any tool available to you... we used a glass.

Place the cut out dough on a baking sheet lined with parchment paper and bake for 15-18 minutes, until golden.

Eat as soon as possible while they're still soft and warm on the inside! Who knew biscuits could be so simple?!
