Vegan Peanut and Almond Butter Cups
On the third day of goodness we bring to you a super easy, but equally delicious recipe for your own homemade peanut butter cups that also happen to be vegan and gluten free. What more could you want?! These can be made with almond butter or peanut butter, or really any nut or seed butter that tickles your fancy, so everyone can enjoy it! This recipe has been a hit every single time without fail, so if you're on the hunt for a quick and foolproof dessert, look no further!
Ingredients:
1/2 cup nut or seed butter of your choice
1 tbsp maple syrup (if using unsweetened nut butter)
2 cups vegan chocolate chips (most no name semi-sweet ones are vegan)
1 tbsp coconut oil
Instructions:
Line a muffin tin with cupcake liners.
Heat up the chocolate chips and coconut oil in the microwave, stirring every 30 seconds until fully melted.
Pour a thin layer of chocolate into each cupcake liners and place in the freezer for 5 minutes to slightly harden.
Mix the nut butter and maple syrup in a bowl. If your butter is too creamy, try adding a tablespoon of flour of your choice. Coconut flour works well and keeps the recipe gluten free.
Place a dollop of the nut butter on each chocolate layer and spread it into a small circle.
Pour another layer of the melted chocolate over until the nut butter is not visible.
Place in the freezer for 15-20 minutes. Let them thaw for a few minutes before serving.
Store any extra in the fridge once they have been frozen.
