The Best Ever Vegan Banana Bread

I personally believe that having a go-to banana bread recipe that never fails is a must when becoming a grown-up. By this standard, I am officially an adult (yay!) because I have finally mastered the art of making banana bread and it's even vegan! This wonderful loaf is dense, delicious, sweet but not too sweet, and fairly simple to make. Let's begin so you can all achieve real adult status too!

PS. we apologize for being MIA lately. It is finals season in the university world and we are feeling the hit. But do not fret! We have many tasty things in store for the holidays, so keep your eyes peeled!

Ingredients:

3 ripe bananas

1/4 cup melted coconut oil

1/4 cup almond milk (we use unsweetened vanilla)

1/2 cup brown sugar

2 tbsp maple syrup

2 tsp vanilla

2 cups all-purpose flour

1 tsp baking soda

1 tsp cinnamon

1/4 cup chocolate chips (optional)

1/4 cup chopped walnuts (optional but highly recommended)

Instructions:

Preheat the oven to 350 and spray a loaf pan.

Start by mashing up the bananas into a slightly chunky but almost puréed consistency. Add in the melted oil, brown sugar, vanilla, almond milk, and maple syrup and mix it all together.

Slowly mix in the flour. Then add the baking soda and cinnamon until it is all well combined. If it seems a little dry, add in a splash more of almond milk.

The best part: sprinkle in the chocolate chips and the walnuts. These are not necessary but they give it such a nice flavour and the walnuts add the perfect amount of crunch. I highly suggest you it!

Bake for 45-60 minutes until a toothpick comes out almost clean. I find it is perfectly moist if you take it out around the 55 minute mark when the toothpick comes out with a tiny bit of batter. After you let it sit for about 15 minutes, it will be the perfect texture.

Et voila! The perfect cozy treat to snuggle up with in bed on rainy days that the West coast just can't seem to get enough of. Enjoy!
