Fluffy Vegan Chocolate Chip Cookies
Sometimes you get a mad sweet tooth craving that just can't be curbed, and it is in times like those that you need to give into temptation and bake some damn chocolate chip cookies... A true classic, feel good treat. This is a pretty simple recipe that you probably already have all the ingredients for in your kitchen so that's a plus, and it doesn't take long to make either so your craving will be satisfied in no time! We made these about 10 minutes ago and I've already downed 4... I guess it's just one of those days. So let's dig in!
Ingredients:
1/2 cup melted coconut oil
1 1/2 tbsp ground flax seed mixed with 4 1/2 tbsp water to make a flax egg
3/4 cup brown sugar
Sprinkle of sea salt
1/2 tsp baking soda
1 tsp baking powder
2 tsp vanilla
1 1/2 cup flour
1/2 cup vegan chocolate chips (no name brand semi-sweet does the trick!)
Instructions:
Preheat oven to 350F.
Beat together all of the ingredients except the flour and chocolate chips until it is well combined and a little fluffy.
Add in the flour gradually, starting with 1 cup and then slowly adding the rest. It should have a sticky consistency that is mildly concerning but don't worry, it will turn out just fine.
Add in as many chocolate chips as your sweet tooth desires.
Place in small balls on a lined baking sheet and bake for about 10-12 minutes, until they are still soft and the bottoms are lightly golden.
