Easy Chickpea Avocado Lettuce Wraps

While we're all about warm, cooked meals during the colder months, sometimes you just don't have time to whip up a fancy feast and need a quick but satisfying meal. These lettuce wraps take five minutes to make at the very most, and are more filling than they look! And yes, it is a bit of a green overload at first glance and we know people tend to have a negative attitude towards foods that are green (who knows WHY!!! Greens are the best!) but trust us when we say that this green-on-green lunch will hit the spot without leaving you in a paralyzing, overstuffed food coma.

Ingredients:

1 avocado

1 cup chick peas

3-ish large pieces of lettuce of your choice

Salt

Pepper

1 tbsp lemon juice

1.5 tsp mustard

Instructions:

This is not rocket science. Mash up your avocado with the salt, pepper, lemon juice, and mustard until it is creamy like guacamole. We ask that you practice self control and refrain from pulling out your tortilla chips and treating it as such.

As always, do a quick taste test to see if you need to add more of anything.

Toss in your chickpeas and mix it around until they are fully coated in the delicious avocado mash.

Place the mixture in your lettuce cups and bam: the easiest, healthiest, and quickest lunch you've ever made! Bon appetit!
