Loaded Mexican Yam Boats

Today we have a super healthy and easy recipe that is perfect for dinner when you have just a little extra time on your hands. Making these yam boats is super simple, but we all know what a pain it is to wait almost an hour for yams to cook. So if you have the patience and the time, this recipe is a guaranteed hit as a healthier twist on a comforting Mexican dish.

Ingredients:

5-6 yams (1 per person)

1 can black beans

1 can corn

1/2 white onion, chopped

2 cloves garlic

2 tsp cumin (roughly, to taste)

Optional toppings:

Earth Balance vegan butter

Salsa

Avocado

2 tomatos, diced

Instructions:

First things first, you want to get those yams cooking as soon as possible. Start by microwaving them for 5-10 minutes until it starts to soften. Then poke little holes in them with a fork, wrap in foil, and bake at 400 for anywhere from 30-50 minutes until they are soft and fully cooked.

In a saucepan, sautée your onions and garlic with cumin until they are fragrant and transparent. Mix in your corn and beans until they are warm.

Once your yams are finally ready, cut them open and add in some vegan butter (this is totally optional, it will taste amazing even if you don't have any on hand), stack them with as much corn, beans, salsa, avocado, and fresh tomato as your heart desires. Feel free to make it your own and add whatever toppings you please. The messier, the better! Dig in!
