Life-Changing Black Bean Brownies

Yes, you read that right. These delicious, gooey, protein-packed brownies are made with a very unexpected ingredient, but please trust us when we tell you they taste AMAZING and you would have no idea there were black beans in there if we hadn't told you. We like to think that they're super healthy and a good choice for breakfast since they're loaded with protein and other relatively healthy ingredients, but they're also great for an indulgent dessert that is actually not so bad for you! Intrigued?? Let's get baking!

Ingredients:

1 can black beans (540 ml)

3 tbsp cocoa powder

3/4 cup oats (ground to a flour)

1/2 cup maple syrup

1/4 cup coconut oil, liquid

2 tbsp vanilla

1.5 tsp baking powder

1/2 cup chocolate chips (optional, we usually do it without but if you like extra gooey chocolatey brownies then toss 'em in)

Instructions:

Preheat oven to 350.

In a blender or food processor, blend the oats until you achieve a flour consistency. The less chunks, the better.

Remove flour and blend up the black beans as much as possible without adding any liquids just yet.

Then, start by adding all the liquids and blend until smooth.

Add in the dry ingredients and blend once again until it is well combined and smooth.

If you are using chocolate chips, throw them in and mix.

Pour the batter into a brownie tin or any tin you have available (we have used all kinds of weird things but it always seems to work out).

Bake for 15 minutes and check with a toothpick. If it doesn't come out clean, put it in for another 3-5 minutes.

And voila! Now you have healthy, delicious brownies that will not only satisfy your sweet tooth cravings but will also secretly provide your body with some good 'ol protein that vegans apparently can't get enough of!
