Summer Fresh Beet Salad

As summer comes to an end, we thought now would be the perfect time to kiss the warm weather goodbye with one last light and summery salad. Of course, salads can be enjoyed all year long, but with the end of summer also comes the end of vegetable garden season, so we really want to take advantage of having the freshest veggies right in our own backyards (literally).

As always, we try to look into some of the health benefits of our ingredients, so let us enlighten you on why you should incorporate some beets into your diet. This earthy vegetable that is loved by some but hated by many helps to lower your blood pressure and fight inflammation. Not only that, but they are abundant with awesome nutrients like fibre, vitamin C, potassium... And the list goes on and on. Need I say more? Just eat your damn beets.

This beet slaw can be a salad on its own or can be used in a more elaborate mixture with greens, nuts, seeds, or whatever other toppings you enjoy. To add the perfect dash of sweetness, we use our homemade mango salsa as a dressing and it tastes phenomenal. That recipe is coming very soon so keep your eyes peeled!

Ingredients:

For beet slaw-

3 large beets

3 large carrots

1.5 tsp apple cider vinegar

1 tbsp balsamic vinegar

1.5 tbsp olive oil

For rest of the salad (optional)-

Lots of spinach (or any greens)

Generous handful of walnuts (or any nuts and seeds)

Generous helping of mango salsa (RECIPE COMING!!!)

Instructions:

Preheat oven to 350. Wrap the beets in foil and roast for 20 minute intervals until cooked.

Once cooled, remove from the foil and peel the skin off.

Grate the beets and carrots- we used a cheese grater.

Combine the grated vegetables with the apple cider vinegar, balsamic vinegar, and olive oil.

And there you have it! You can pack it up and eat this on it's own, which makes a super easy snack or small lunch to take to school or work, or you can lay it over a bed of spinach (or any greens) and top it off with walnuts for a nice crunch. What an easy and refreshing way to get your beet fill for the day!
