Nutrient-Packed Vegan Yogurt Parfait

It seems everyone is trying to cut out dairy these days, whether it's to adopt a vegan lifestyle or simply to cut back after finding out it's really not so great for you, but who said that means you can't still enjoy yogurt for breakfast?! Thankfully it is 2017 and dairy-free options are abundant and readily available just about everywhere. For this recipe, we used SoDelicious' unsweetened coconut milk yogurt and it's so creamy you wouldn't even be able to tell the difference!

To make this recipe even better, we top it with chia seeds, hemp hearts, flax seeds, and sunflower seeds to get all kinds of health benefits and loads of protein to start the day! Seriously, can people stop asking how vegans get protein yet?! The better question is why the heck do people still think meat is the only possible protein source this planet has to offer?? Clearly, there are tons of plant-based protein sources out there! On top of all the protein, these superfoods provide those good fats in the form of omega-3s, as well as fibre which aids with digestion... and that's just scratching the surface of their benefits. Now don't worry, you can barely taste them in your parfait; they just add a little bit of crunch and a whole lot of nutrition. Let's get started!

Ingredients:

1/2 cup to 1 cup dairy-free yogurt of your choice (use as much yogurt as you usually would to fill you up)

1 tsp maple syrup (or more to taste)

1 banana, chopped

1 peach or nectarine, chopped (but use any fruit you have on hand or whatever you prefer)

A handful of blueberries

1/2 cup granola (we use Nature's Path but again, use whatever brand you love)

About a sprinkle of each of the seeds (chia seeds, hemp hearts, flax seeds, and sunflower seeds)

1 tbsp our homemade chia seed jam (this adds SUCH a nice flavour to the bowl- a must try)

Instructions:

If you're using unsweatened yogurt like us, mix in the maple syrup until it has a nice, sweet taste you enjoy. Top it off with whatever fruits you want and throw in your granola and healthy seeds. Lastly, if you have made our super quick and easy chia seed jam, we highly recommend adding a nice dollop of that into the mix- it adds a really nice sweet flavour.
