Not Your Grandma's Jam...
Who said making jam had to be complicated? With this simple 4-ingredient recipe, you'll never want to eat store bought jam again. Chia seeds are JAM packed with fibre, protein, omega-3s, and antioxidants. They also provide plenty of calcium for you vegans out there whose non-vegan friends and family don't seem to understand how you can get it without drinking milk. Aside from all the nutritional benefits, it tastes delicious and is only sweetened with Canada's best natural sweetener, maple syrup! Try it on toast, in a vegan yogurt parfait (recipe coming soon!), or however else you like to eat your jam. Let's get jammin!
Ingredients:
1 cup frozen berries, MUST be frozen not fresh for it to become a jam consistency (we used a mixed berry blend, but use your favourite berries)
1.5 tbsp chia seeds
1 tbsp apple or orange juice (we used apple)
1 tsp maple syrup, or to taste (or any sweetener of your choice)
Instructions:
Put your frozen berries in a microwave safe bowl and heat them for 2-3 minutes, until completely defrosted, stirring halfway through.
Mash the berries with a fork until you achieve your desired chunkiness.
Combine with chia seeds, juice, and maple syrup, stirring very well until fully combined.
Let sit at room temperature for 30 minutes. Transfer to an air tight container (we used a mason jar) and store it in the fridge for up to one week... if you can even make it last that long.
And voila! You have now made your own homemade jam, your grandma would be so proud!
